How to Make a Slightly Better Gluten-Free Loaf of Bread in a Zojirushi PDC20BA

After much research and consideration, and listing a few unused items on Facebook Marketplace, I bought the best bread machine for our family a few years ago. I have been making a few loaves a week ever since.

I learned early on that to get the most consistent loaves each time I needed to ditch the measuring cups and use a kitchen scale.


I started with the recipe from Zojirushi and tweaked it for our family based on our intolerances and preferences.

I use:
400 g water

3 duck eggs (as a few of us are intolerant to chicken eggs)

15 g Vinegar or Apple Cider Vinegar (Aldi)

36g Olive or Avocado Oil (Aldi)

40g Honey, local when possible

Loaf yield for each store-bought ingredient

(I wish I had known this when I started before I bought a massive supply of some items and only a few of others):
1 33.8oz bottle ACV=66 loaves
1 16.9oz bottle Olive Oil= 13.88 loaves
1 32oz box of Potato Starch =2.83 loaves
1 24ox bag of Rice Flour =2.98 loaves
1 6oz bottle of Xanthan Gum= 21.25 loaves
1 26oz bag of Salt= 98.26 loaves
1 jar of Yeast= 12.55 loaves

I bought a big supply of Xanthan Gum before I realized one bottle could make 21 loaves. Lesson learned!


I like that this machine makes substantial-sized loaves of bread that can often serve our large family for at least 2 meals. Cutting the bread slices in half makes a sandwich that is just right for the little ones.

I have not figured out the cost per loaf for 2024 (many items have increased in price, so I’ll do this soon and update here), but for 2022:
A loaf with potato starch, olive oil, & duck eggs=$5.14
A loaf with corn starch, olive oil, and duck eggs=$5.63

Our youngest turned one last weekend.

Here I am, just reflecting on how the amount of energy poured into the first year of nurturing a sweet little babe can feel so isolating. Even the 5th time around!

Friendships have been hard for me the past year and a half-ish, and especially more so the last 4 months after someone pointed out many things they didn’t like about me, and I decided to work on it. Growth can be good, but also hard!

Feelings of being pitied, used, unloved, and disconnected can creep in easily if I’m not careful to keep them in check.

I’m holding onto the love for my husband and kids like a lifeline. These are the relationships that matter above all else.

I know that my heart is at home, where it belongs. These days of cooking, baking, cleaning, and teaching a big family are the good days that I prayed for. 

I hadn’t thought to pray that I could maintain friendships at the same time! Oh, how I miss the days before social media when friends and I gathered often and talked about things that mattered deeply in our hearts, and things that didn’t, like home decor and celebrity news.

Friends, it’s okay to admit when relationships feel strained or distant.
It’s a journey, not a destination, right? Ongoing improvement and some deep self-reflection are valuable and necessary.

I have learned that I cannot be everything to everyone, and that’s okay. I don’t thing we were made to be, despite what social media can make us feel. I have intentionally curated a more simple lifestyle that doesn’t involve calendar clutter and faux relationships.

I encourage you to cut the crap, zero in on your dreams, and start living the life you long for, the life God planned for you.

Pray for clarity in where you belong.

There is a tribe for you.

Meanwhile, let’s embrace the bumps and work towards deeper connections. ❤️

Slightly Better Granola Cereal

This Homemaker made Homemade Granola this afternoon. Anyone else doing this?
We had occasionally been buying #glutenfree granola cereal at $3 a bag, but when the price went to almost $4 for just 12 oz, I knew it was time to make my own.

This is a basic beginner level recipe. You can add things to it like raisins, nuts, or other dried foods that you like.

Recipe:

4 C. Rolled Oats (make sure they’re gluten free)
1/2 C. Melted Coconut Oil
1/2 C. Honey
A few shakes of Cinnamon (for flavor)

Bake at 350° for 20 minutes

If you’re adding dried fruit, do that after it’s cooked, so you don’t dry them out too much.

After it’s good and cool I store this in the fridge in a Mason jar that I’ve removed the air from. It would be fine on a shelf for the week.

Adjust baking times as needed to your desired doneness, stir half way through if you’d like (I don’t).

A Slightly Better Hot Cocoa {Gluten & Dairy Free}

If you’re looking for a Gluten Free & Dairy Free Hot Cocoa recipe that’s slightly better for you than a prepackaged mix, but just as easy, I’ve got you covered!

A Slightly Better Hot Cocoa
1/2 Cup Cocoa powder
1 Cup Collagen Powder
1/2 Cup Coconut Milk Powder
1-3 tsp Cinnamon (depending on your preference)
1/2 Cup Maple Sugar (add more if you like it sweeter)
1/2 tsp Quality Salt

I added all of these to a mason jar and gave it a good shake for a minute.

To enjoy: Add 1 Tablespoon of the dry mix into a cup of hot water and stir. You can add another Tablespoon if you like it richer. I like to use a milk frother (I don’t froth milk, ever, but I love this little tool for mixing powders into water it gives it a smooth finish).

You may substitute the ingredients above as you need to with what you have available. I think the important thing here is to be intentional with the ingredients and think of what each one might do within your own body. Will a warm cup of hot cocoa support and nourish your body, or leave you with low energy levels and a sugar crash? Pay attention to how you feel after you consume any food or beverage and make adjustments as needed.

After trying the base recipe above I added a little turmeric powder and beet powder to my jar because we always have those in the house and I add them to my morning smoothies for added nutrition. I’m used to the flavors. That may be weird for you, and that’s fine. Ha!

My oldest daughter loves sweets and thinks it’s important to mention that this isn’t as sweet as the blue box hot chocolate you may be used to. She said it is good and creamy though and it’s worth trying!

There are two ways to remedy this: You can either train your brain that this is better for you and decide to get used to it, or you can add more maple sugar or a spoonful of maple syrup in your cup as you wish.

Review: JoyJolt 12 Piece Knife Set (Unboxing Video and Photos Included)

I’ve been using JoyJolt Knives in my kitchen to see how they compare to my expensive Cutco knives that were purchased through a super helpful rep at a Home Show. I love my two Cutco knives (Hardy Slicer & Cheese Knife) so much that I literally donated every other knife in my kitchen a few years ago.

Since then I have tried a few different cheese knives because I’d like to add one more to our drawer for when we’re all in the kitchen prepping food together (it’s rarely used for cheese). They have ALL been sent back UNTIL JoyJolt showed up in my kitchen.

I found some real keepers here! You know it’s good if I allow it a permanent place in my home, as I am very particular about curating a minimalist home and avoiding clutter.

You guys, I expected to have all sorts of constructive criticism about this set, but it is actually super incredible. Out of the 6 knives, there is only one that I do not think our family would use, which is the Santoku. This is just a personal preference based on what we cut and dice up here. I didn’t think it was better or more unique than the other knives, so it isn’t necessary to have a duplicate that can do the same job another knife can do. I will give it another try before I decided if I’ll pass it along to another home.

The JoyJolt paring knife is the best I’ve used, anywhere, ever! So far this JoyJolt paring knife has perfomed better than my previously owned Cutco paring knife (which I sold, as I didn’t love it or feel confident using it).

I appreciate that this whole set of 6 knives is under $20 and that makes me feel a tad foolish that I spent about $100 on one single Cutco Cheese Knife (although it has served us well for 6 years and will keep getting used multiple times a day).

The JoyJolt set comes with sheaths, which I had to purchase separately for my other brand of knives AND pay shipping. Many knife companies don’t even offer this. Don’t underestimate this accessory. It helps protect YOU while you reach for the knife in the drawer, AND it preserves the life of the blade, keeping it sharper longer.

If you don’t love something in your kitchen (or anywhere in your home), seek out something better.

Every drawer and cupboard in your kitchen should be filled with things that serve you well and function just as you expect them to.

Wife + Momma

There isn’t an easy way for me to adequately describe the depth of the joy and honor that I feel to be the wife and mother of this family. The love I have for this tribe is overwhelmingly beautiful, intense, and never-ending.

Gathering around the table for homemade apple pie (my grandma’s recipe) will always hold a special place in my heart.

I imagine the days ahead when my children might make this same treat for their families, and the heart behind the tradition continues to deepen with each generation.

I wonder how they will tell the stories of their childhood. Will they remember the love and dedication we all had for each other? Will they forget the little spats and disappointments?

Will they connect with their families over food, recreation, or something else? Will meals around the table be a priority for them, as we’ve made it here?

Will they willingly work with their hands to provide nourishment for themselves and the tribe around them?

When they fall in love, will it be forever?

I’m excited for the future, while still fully embracing the present moments that are here and now.



No matter how life goes on this side of heaven, I know this to be true, God is always good. 💕

Tomato Free Salsa

Let’s keep this simple! I love salsa, but consuming tomatoes make my feet so sore I can barely walk, and they put our little girl into tears for the same thing, sore feet. It hasn’t always been this way, yet it has intensified over time. Although, sometimes we can tolerate marinara sauce like in the form of pizza sauce.

It’s weird, I know. I’m done trying to figure it out, and I’m done feeling sorry for myself over food allergies and intolerances. I feel empowered and inspired by creating dishes that our whole family can eat. I love how we’ve unlocked what makes our bodies feel GOOD!

When it comes to quick dishes like this, that aren’t needing a certain sort of science and careful measurements to bake properly, I imagine my great-great-grandmothers just tossed foods together and didn’t think twice about measuring them. So that’s what I like to do too, a little of this, a little of that. Taste, adjust, repeat until it’s how you want it.

God created this one today, as my hands grabbed things and combined them that I never would’ve thought could go together.

Note that I diced each ingredient into tiny pieces, like super tiny. I first cut them into smaller chunks with a knife, then tossed them into my food chopper. If you don’t have a food chopper, no biggie, just keep chopping with your knife.

Homemakers, this is satisfying stuff. Grabbing different foods that came from the Earth and combining them into something edible can be such a beautiful art if you let it.

Alright, let’s get to it:

I started with carrots. I wasn’t sure if I would cook them first since they’re so firm, but I decided that if I cut them small enough they didn’t need the extra step of being cooked.

Then I added the handful of pineapple tidbits the kids had leftover from lunch, an onion, and diced green peppers from the freezer.

That’s it. No measurements, just work with it and taste it until you love it. I’m enjoying this right now with tortilla chips, but this could also be sprinkled over a salad, a bowl of rice, or scrambled/fried eggs.

Quick Tip Tuesday: Set that Timer

You know that when you’re making cookies you want to SET THE TIMER. Of course that’s because you don’t want to burn your cookies making them only edible when they’re crumbled over a massive bowl of ice cream and then covered in Hershey’s chocolate, not that I’ve ever done that or anything.

When baking I view each of those 7-10 minute blocks of time as little mini challenges.

It’s like how much can I get done while the clock is running? GAME ON!

A Slightly Better Wife Cooking Baking Baked Cookies Timer

When I set the timer for cookies I roll the rest of the dough into balls and pop them in the fridge until it’s time to pop them in the oven.

Most of our daily or weekly tasks that we need to do around the house can be done fairly quickly.

I’m not even kidding when I tell you this next part…

I’ve spent hours looking at clean houses on Pinterest and Google searching ways to tidy the house quickly. HOURS! And then I’ve put my phone away and gone back to doing something that is equally as unproductive as looking at clean houses online. 

When I do this simple little thing it changes the way I clean.  The results are excellent, both for the physical outcome of the house, and for my energy level. It’s quirky, but I LOVE racing the clock.  It gives me so much energy and makes me happy!

I grab my timer and then go around doing random things like this:

  • Fold or switch out laundry
  • Wipe down the sinks
  • Wash the mirrors
  • Vacuum the living room
  • Wash the Vacuum filter- I love my Dyson and treat it well.
  • Organize a drawer
  • Separate the dirty socks from the toys in the toy bin (this is a real issue that only parents of toddlers understand).
  • Wash my makeup brushes
  • Take the recycling to the garage
  • Empty the garbage cans in each room
  • Check the furnace filter, change if needed
  • Organize the fridge and wipe down the shelves
  • Pull all of the “too small” clothes out of a kid’s closet.
  • Strip down the beds and wash everything
  • Wipe down the TV screen
  • Dust the furniture
  • Straighten up the shoes and coats in the mudroom
  • Unload or reload the dishwasher- My kids mostly do this task, bless!

Okay, you get the point. So many of these really simple things could be done in 10 minute blocks.  Several of them you could group together and within 30-40 minutes all the little annoying things are done and you can just admire your work OR set the timer and keep going on something else!
